What if everything we think we know about psychology turns out only to apply to undergraduate students?

I read a bestseller a couple of years ago by a profesor who discussed various topics based on his studies of graduate students and he made a lot of inferences about economics from them--for the life of me I have forgotten the name of, but I remember hearing the criticism that a lot of his assumptions were based on the choices that undergraduate students made. It does make you wonder.
I've often wondered this too. With all the diverse cultures of the world, how much weight should we place on study of human psychology that is largely limited to late-modern "western" culture?
